    This rice has medium to long grains, which undergoes a process called parboiling. Raw rice is put into how water, steamed and quickly dried. Parboiling process gives to the rice an amber color, a better cooking resistance and a higher nutritional value: vitamins, dietary minerals and fibers are literally entrapped in the grain. Parboiled rice is easy to be prepared, because it hardly overcooks. It is suitable for salads and risottos.
