Chickpea and cinnamon donut mixed berries jam

  • 220 g of chickpeas
  • 3 eggs
  • 60 g of sugar
  • 70 g of acacia or wildflower honey
  • 1 tbsp of baking powder
  • 50 g of hazelnut flour 
  • 60 g of butter
  • 60 g of potato starch
  • 50 gr of mixed berries extra jam
  • Cinnamon to taste
  • 1 pinch of salt
  • Lemon zest

Organic chickpeas cooked in water, no salt added. Packaged in BPA FREE cans.

Blend the chickpeas and add the sugar, the honey, the half-melted butter and one yolk at a time, mix well. On a side, add the sifted starch to the baking powder, the cinnamon and the lemon zest. Mix all together. Then beat the egg whites and add them carefully to the mix. Pour it in the donut molds and put them in the pre-heated owen at 180°C for about 12 minutes. Once cooked, take it out from the oven, let it cool down, fill the donuts with a generous quantity of jam.
