Brown the onion in a pan with a little extra virgin olive oil, add carrots and secondly the drained beans and let them develop more flavor. Blend the beans lightly smashed. Salt and pepper to taste, and add the minced herbs. Adjust the mix consistency with the bread crumbs and mould it in the shape of a medallion. Cook in a hot pan greased with oil for a few minutes on each side.


  • Boiled black-eyed peas 1 can
  • Minced onion 1/2
  • Chopped carrot 1
  • Rosemary, sage, parsley
  • Bread crumbs 30 gr (2 tbsp)
  • Salt to taste
  • Extra virgin oilve oil 20 ml (4 tsp)
