Chickpea and cinnamon donut with mixed berries extra jam

Blend the chickpeas and add the sugar, the honey, the half-melted butter and one yolk at a time, mix well. On a side, add the sifted starch to the baking powder, the cinnamon and the lemon zest. Mix all together. Then beat the egg whites and add them carefully to the mix. Pour it in the donut molds and put them in the pre-heated owen at 180°C for about 12 minutes. Once cooked, take it out from the owen, let it cool down, fill the donuts with a generous quantity of jam.


  • Boiled chickpeas 220 gr (about 1 cup)
  • Eggs 3
  • Sugar 60 gr (about 1/4 cup)
  • Acacia or wildflower honey 70 gr (1/4 cup)
  • Baking powder 15 gr (1 tbsp)
  • Hazelnut flour 50 gr (1/2 cup)
  • Butter 60 gr (1/4 cup)
  • Potato starch 60 gr (1/2 cup)
  • Extra berry fruit jam 50 gr (3 tbsp)
  • Cinnamon, to taste
  • A pinch of salt
