Chickpea and cinnamon donut with mixed berries extra jam

Boiled chickpeas 220g

Sugar 60g
Acacia or wildflower honey 70g

Hazelnut flour 50g

Mixed berries extra jam 50 gr
Cinnamon to taste

The honey has a liquid consistency, and a clear straw-yellow color. It is children’s favorite honey, thanks to its delicate and not persistent flavor.

Blend the chickpeas and add the sugar, the honey, the half-melted butter and one yolk at a time, mix well. On a side, add the sifted starch to the baking powder, the cinnamon and the lemon zest. Mix all together. Then beat the egg whites and add them carefully to the mix. Pour it in the donut molds and put them in the pre-heated owen at 180°C for about 12 minutes. Once cooked, take it out from the owen, let it cool down, fill the donuts with a generous quantity of jam.
