Chocolate and Aquafaba Mousse

Preparation
Melt the dark chocolate using a double boiler.
Whip the chickpea water with a bit of cream of tartar or apple cider vinegar until it reaches a stiff consistency.
Gently fold in the melted dark chocolate, mixing from the bottom to the top to avoid deflating the mousse.
Divide the mousse into glasses or bowls and refrigerate for at least two hours.
Serve with one of Bioitalia's 100% fruit jams and garnish with fresh fruit and mint.

- Aquafaba from one can of chickpeas
- Approximately 400 g of melted dark chocolate
- 1 teaspoon of cream of tartar or apple cider vinegar
