Farrotto with pumpkin and artichokes

Chop the pumpkin and cook it in a pan with a little water. Leave it rather brothy and keep it aside in a pan.
Cook the spelt in salted water, drain it and add it in the pan with the pumpkin. Stir it, let it become tasty and add some artichokes.


  • Spelt 320 gr
  • Artichokes in  oil 1 jar
  • Pumpkin 300 gr
  • Salt to taste
  • Water, as much as need to cook the pumpkin
  • Extra virgin olive oil 20 ml (4 tsp)
