Orzo pasta salad with corn, stuffed olives, cappers, grilled artichokes, herbs

Preparation

Cook the Orzo pasta, drain and season it with 4 tbsp of extra virgin olive oil and the minced parsley.

Season the half cut olives, the grilled artichokes, the corn and the desalted capers with the remaining olive oil and the parsley in a bowl. Mix with the Orzo pasta, let it rest of 20 minutes so that the pasta gets a rich flavour and serve.

  • Grilled artichokes 200 gr
  • Corn 100 gr
  • Stuffed green olive 80 gr
  • Minced parsley 1 tbsp
  • Capers 1 tbsp
  • Extra virgin olive oil 4 tbsp 
  • Salt to taste
