Preparation

Dice the bread, quarter the cherry tomatoes, and dice the cucumber and bell pepper. Slice the onion. Add the fresh herbs, apple cider vinegar, and salt. Add the beans, extra virgin olive oil, and mix well. Serve after about half an hour to allow all the flavors to blend.

Ingredients

  • 15 cherry tomatoes
  • 1 cucumber
  • 1 small green bell pepper
  • 1/2 onion, sliced
  • 1 can of white Spanish beans
  • 5-6 fresh basil leaves
  • 2 slices of country bread
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons extra virgin olive oil
