In a bowl, sift the flour with the baking powder and salt.

In a separate bowl, mix the eggs with milk, ricotta, tomato paste, Grana cheese, and finely chopped herbs.

Combine the dry and liquid ingredients using a whisk.

Pour the batter into a greased and floured plumcake mold (or 6 small ones) and bake in a preheated oven at 180°C (350°F) for about 20-25 minutes.

Serve warm or cold.


  • All-purpose flour 185 gr (1 1/2 cups)
  • Milk 100 ml (6 1/2 tbsp)
  • Eggs 3
  • Tomato paste 80 gr (1/3 cup)
  • Ricotta cheese 30 gr (2 tbsp)
  • Extra virgin olive oil 60 gr (4 tbsp)
  • Grated Parmesan cheese 100 gr (1 cup)
  • Baking powder 16 gr (4 tsp)
  • Fresh basil and oregano to taste
  • Salt and pepper to taste
