Preparation

Add water to the soy granules in a bowl and let the soy rehydrate for 15 minutes.

Heat the extra virgin olive oil in a skillet over high heat.

Add the sliced ​​onion, diced carrots, and tomato paste. Sauté for 2 minutes. Add the rehydrated soy granules and black beans. Let it cook for 5 minutes over high heat. Season with salt, pepper, and add the Tabasco. Mix and remove from heat. Assemble the burrito by placing the chili beans and soy in the center of a tortilla heated in the skillet. Add the corn kernels and 4 slices of tomato. Roll the tortilla over itself, being careful not to let the filling spill out and to close the side edges. Serve the burrito hot, perhaps cut in half.
