Waffles

- All-purpose flour 180g
- Powdered sugar 150g
- Baking powder 6g
- Eggs 2
- Milk 140ml
- Plain yoghurt 1
- Butter 150g
- Extra virgin olive oil 1 tbsp
Mix all the powdered ingredients in a bowl.
Divide eggs and whisk the yolks in a bowl along with the other liquid ingredients, then combine them well with the flours.
Whisk the egg whites and add them to the mixture.
Heat a waffle grill previously greased with a little extra virgin olive oil. When hot, add 2-3 ladles of the dough. Be carefull neither to leave any gap nor to put too much dough on the grill, always leave a space of 2 mm from the edge.
Close the grill and cook for two minutes. Open and control the waffle, it should be still white. Close it again, turn the grill upside down and cook for two more minutes until it is golden coloured on both sides.
Open it and place the waffle on a serving plate.
P.S. If you do not have a waffle grill you can use a common pan and follow the same method of pancakes.
