Heat the olive oil in a wok or a deep skillet. Sauté the garlic, then add the carrots and shrimp. Add the chili pepper and soy sauce. Season with salt and pepper.

Toast the peanuts or cashews in a separate pan.

Cook the rice noodles in a pot of salted boiling water, drain them well, and add them to the wok with the sauce. Sauté for a few minutes, then add the Limonolio and top with the toasted nuts.

Garnish with cilantro and chives before serving.


  • rice noodles 320 gr 
  • cleaned shrimps 200 gr
  • carrots, julienned 150 gr
  • peanuts or cashews 80 gr
  • extra virgin olive oil 60 gr
  • soy sauce 20 gr
  • garlic cloves 2
  • cilantro, to taste
  • chives, to taste
  • chili pepper, to taste
  • Limonolio 1 tbsp 
  • salt and pepper, to taste
